Beat egg whites until soft peaks form. Gently fold egg whites through lemon mixture (mixture may look a little curdled). Spoon mixture into a greased pudding dish. Sprinkle with flaked almonds. Bake at 180 degrees c for 40-45 minutes or until golden and just set (cover with foil during cooking if over-browning).place brown sugar in a shallow dish. Dip lemon slices in sugar to coat. Melt remaining butter in a frying pan. Cook lemon slices for 1 minute each side or until sugar caramelizes. Top pudding with lemon slices. Dust with icing sugar. Serve immediately with ice-cream. Lentil Soup: Ingredients: Olive oil 1 tbsp Onion, diced 1 Carrots, diced 2 Garlic, minced 5 cloves Vegetable stock 6 cups Red lentils, soaked 1- 1/2 cups Corn 2/3 cup Ground cumin 2 tsp Curry powder 1 tsp Saffron 1 pinch Cayenne 1 pinch Lemon zest and juice 1 lemon Salt and black pepper as required Method: To sauté the vegetables, heat oil, add onion, carrots, garlic and sauté. Simmer. Stir in the stock, lentils, corn, cumin, curry powder, saffron and cayenne until combined. Cook until the soup reaches a simmer and then cover and cook until the lentils are completely tender. Blend and puree the soup. Season with salt and black pepper. Stir in the lemon zest and juice until combined. Serve warm, garnished with a lemon slice.'
